It grew out of Olive My Pickle, the fermented foods brand Charlotte and Shai Tzabari built over 15 years at the St. Augustine Amphitheatre Farmers Market. The recipes themselves go back much further. Shai’s family traces its pickle tradition back six generations to his great-great-grandmother, Bubbie Miriam, the earliest known keeper of the family recipe. Her daughter Rebecca later carried that recipe with her as the family’s story moved across continents and generations, passing it down until it eventually became what is now Olive My Pickle’s best-selling kosher dill. That same recipe still sits at the heart of everything they make today.
In 2024, Charlotte and Shai opened the first Pickle Factory location in Jacksonville as a way of thanking the community that had supported them for years and to give pickle lovers a place that felt a little like home. The St. Augustine location, which opened in early March 2026, brings the story back to where it started.
